Bean
Casserole
(6-8 servings)
1/2 pkg or 10 slices bacon
2 med or large onions
1 cup brown sugar
1/2 cup cider vinegar
1 tsp dry mustard
1 tsp salt
1/2 tsp garlic powder
2 (15 oz) cans butter beans, drained
1 (15 oz) can lima beans, drained
1 (15 oz) can kidney beans, drained
1 (25-28 oz) can baked beans, undrained
Fry bacon until crispy,
crumble, and set aside. Slice onions in thin rings and saute in
bacon grease until translucent/tender. Drain on paper towels.
Mix sugar, vinegar, mustard, salt, and garlic powder in a saucepan;
cover, bring to a light boil and simmer gently for 20 mins.
(Watch carefully so it doesn't boil over and make a
mess of your stove.) Combine
all ingredients in 2-1/2 qt. casserole until evenly mixed, bake at 350
degrees for 1 hour. |
