Taco Soup
(6-8 servings)

1-2 lbs ground beef
1 cup diced onion
3-4 (15 oz) cans diced tomatoes*
1 (15 oz) can pinto beans*
1 (15 oz) can kidney beans*
1 (15 oz) can whole kernel corn*
1 (4 oz) envelope Ranch dressing mix
1 (4 oz) envelope taco mix (your favorite)
1 (4 oz) can chopped green chilies
1 cup water
taco chips, shredded Cheddar
or Monterey Jack cheese, sour cream

*All cans are UNDRAINED

In dutch oven or similar large pot, brown meat and onion; drain excess grease.  Add remaining ingredients and blend thoroughly.  Cook slowly for 1 - 1-1/2 hours.  Garnish with shredded cheese and a dollop of sour cream and serve with your favorite taco/corn chips or cornbread.
