Spaghetti & Meatballs
(6 servings)
Total cooking time: 2 hrs

Sauce:
1 (28 oz) can crushed tomatoes
1 (8 oz) can tomato sauce
1 (6 oz) can tomato paste
1 medium onion, chopped
2-4 cloves garlic, chopped
1 - 1-1/2 T dry basil
2-3 tsps sugar
salt and pepper to taste
olive oil

In a large dutch oven, saute onion and garlic in olive oil, taking care not to burn garlic.  Add tomatoes, sauce, paste and a little water used to rinse out cans.  Add seasonings and simmer for about 1 hour while preparing meatballs.

Meatballs:
1-1/2 lbs ground beef
3/4 cup seasoned bread crumbs
1/4 cup grated paremsan reggiano or romano cheese
2-4 cloves garlic, finely minced or crushed
salt and pepper to taste
enough water to make meat mixture smooth

Mix well and shape into about 2" meatballs.  Place into simmering sauce and cook for 1 hour.

Serve with angel hair or pasta of your choice, a crisp green salad, and garlic bread.
