Tuna-Macaroni Casserole
(4 servings)
1 (6 oz) can of tuna, drain well and flake
1 small onion, chopped
1 (7.3 oz) box White Cheddar macaroni and cheese
1 cup milk, more if needed
3 T margarine
1/2 cup peas (optional - I just use leftovers)
shredded White Cheddar or Monterey Jack cheese
crushed potato chips (optional)
Lightly grease 1-1/2 qt casserole dish and set aside. Cook and
drain macaroni. Saute onion in 2 T margarine until
translucent/tender. Add tuna and heat through. Add cheese
packet, milk, and remaining 1 T margarine; stir until cheese
dissolves. Add macaroni and peas to tuna mixture and blend well.
Pour into casserole dish and top with shredded cheese and crushed
chips. Bake at 350 degrees for about 20 minutes or until cheese
is melted and bubbly.
Notes: As a matter of personal preference, the
yellow mac and cheese doesn't work as well for this recipe.
Canned chicken may be substituted for the tuna. |
