Chocolate Cake
(Yield: one 13x9 inch cake)

2 cups sifted flour
2 cups sugar
1 cup cocoa
2 tsp baking soda
1 tsp salt
1 cup vegetable oil
2 tsp vanilla
2 eggs (gently beaten)
2 cups boiling water

Preheat oven to 350 degrees (325 for high alt.), grease and flour a 13x9 inch cake pan.  In a bowl, mix together in order given.  Batter will be very loose.  Pour into pan and bake for 25-30 mins until tester comes out clean.  Cool in pan on wire rack  completely before frosting.

Frosting:

1 (3.4 oz) pkg vanilla instant pudding
1/4 cup confectioners sugar
1 cup cold milk
1 (8 oz) container Cool Whip

Combine pudding, sugar and milk.  Beat slowly until well blended (approx. 1 min.)  Fold in Cool Whip.  Spread on cake immediately.  Refrigerate.
