Country Cornbread
Yield: 9 (3-inch) squares

2 cups white corn meal
1/4 cup flour
2 T sugar
3 tsp baking powder
1 tsp baking soda
1 tsp salt
3 T soft butter
2 eggs
2 cups buttermilk

Heat oven to 450 degrees.  Generously grease a 9-inch square pan/dish.  Heat in oven while mixing batter, about 4-5 mins - don't let burn. In a bowl, mix together cornmeal, flour, sugar, baking powder, baking soda, and salt.  In another small bowl, whisk together butter, eggs, and buttermilk.  Pour buttermilk mixture into cornmeal mixture and stir until just combined.  Pour into very hot pan and bake 20-30 minutes until toothpick comes out clean or until sides pull away from pan.   Let cool in pan for 5 minutes, cut into 9 squares and serve warm.
