Cheese Puffs
(yield: 5-1/2 dozen)

1 cup water
1/2 cup butter
1/4 tsp salt (optional)
1 cup sifted flour
3 cups shredded extra-sharp Cheddar cheese
2 T minced chives
4 eggs

Bring water, butter and salt to a boil.  Add flour all at once.  Stir over low heat until the mixture leaves the sides of the pan and forms a compact ball.  Remove from heat.  Beat in shredded cheese and chives.  Add eggs, one at a time, beating thoroughly after each addition.  Drop by teaspoonful onto lightly greased baking sheet.  Bake at 400 for 15 mins or until golden brown.  Serve warm.
